How to Store Irish Honey at Home

The everyday approach is straightforward: keep the jar tightly closed in a dry cupboard, away from heat, and follow the storage instructions on its label.
Does honey need to go in the fridge?
Plain honey does not normally need refrigeration, including after opening. Utah State University’s food-quality guidance confirms that refrigeration or freezing is unnecessary for maintaining its quality or extending its shelf life. A kitchen cupboard is a practical home for the jar.

This advice concerns honey itself. Once you mix it into yoghurt, a dressing or another prepared food, follow the storage requirements of that food.
Keep the lid on and the heat away
Keep honey in its original food-safe jar and replace the lid after use. Airtight packaging helps protect stored honey from moisture and surrounding odours.
Choose a cupboard away from the cooker or other heat sources rather than a sunny windowsill. Prolonged heat can darken honey and change its flavour. Using a clean, dry spoon is also a sensible habit: it helps keep water and food debris out of the jar.

What if the honey becomes thick or grainy?
Crystallisation is a natural change in honey. Some of its dissolved sugars form crystals, turning a runny honey into something firmer or more textured. How quickly this happens depends on its composition and storage conditions.
A change in texture alone does not mean the honey has spoiled, nor does it prove that a honey is pure. You can enjoy crystallised honey as a spread without trying to make it runny again.

What does the best-before date mean?
A best-before date concerns the quality a food is expected to retain when stored correctly, rather than being the same as a use-by safety deadline. The Food Safety Authority of Ireland explains that some foods remain suitable after their best-before date, although quality may decline.
