Meet the Beekeeper

My name is Sean Mellett, and I’m the beekeeper behind Mil Chonamara. I keep native Irish honey bees in the wild, windswept landscape of Connemara - a place shaped by Atlantic weather, ancient bogs, heather-covered hills, and a long tradition of working with the land.

What began as a quiet curiosity has grown into a deep commitment: to care for healthy native bees and produce Irish honey that reflects the landscape they forage in.

Along the way, I’ve had the privilege of learning from some of the finest beekeepers in the west - Dave Geoghegan, Paddy Finnerty, and Ger Coyne. Their dedication to the Native Irish Honey Bee (Apis mellifera mellifera) has shaped my approach, reinforcing my belief that good beekeeping begins with understanding and respecting the bees themselves.

I work exclusively with native Irish honey bees. Watching them through the seasons has given me a deep appreciation for their resilience and their place in Connemara’s environment. My job is to keep colonies healthy, respond to their needs, and work with the seasons.

Over the years, what started with a handful of colonies has expanded into a network of apiaries across the region. Each location offers its own mix of forage, and each season brings something different. The flowers in bloom and the weather during the nectar flow all help shape the honey’s flavour, aroma, and colour. That natural variation is part of what makes locally produced honey so special.

My focus is simple: healthy bees, carefully harvested honey, and pride in where it comes from.

To deepen my understanding, I completed the Diploma in Apiculture at the University of Galway, graduating with First Class Honours in 2025. Studying under Prof. Helen Mooney and Prof. Grace McCormack strengthened my knowledge of bee health, genetics, and sustainable beekeeping - knowledge that informs how I care for my colonies every day.

In 2025, I was elected Chairman of the Connemara Beekeepers Association, where I work with fellow beekeepers to support education, responsible beekeeping, and the conservation of our native honey bee.

Mil Chonamara brings that work together. Behind every jar are the bees, the Connemara landscape, and the care that goes into tending the hives throughout the year. Honey production here follows the seasons, and the Atlantic weather has the final say. It calls for patience, close observation, and respect for what the bees need as well as what they produce.

My aim is to offer you quality Irish honey with a clear connection to its place and its producer. Honey from Connemara, produced by native Irish bees and cared for by a local beekeeper.
